From the Big Green Egg DVD (the DVD you get with each BGE purchase)
- King salmon, cut in fillets
- Big Green Egg Cedar Planks
- Fresh green beans
- Diced mushrooms, sautéed
- Diced pecans
- Blue cheese, crumbled
- Brown sugar
- Salt
Prepare a brine by combining 2 parts of salt with 1 part of brown sugar and dissolving mixture in enough water to cover the salmon fillets. Place salmon in glass baking pan (or other non-corrosive pan). Pour brine over fish and soak for at least 1 hour, but no more than 2 hours.
Meanwhile, submerge cedar planks in water and soak for at least one hour prior to use.
Fill a kettle with enough water to cover green beans; add salt and heat to a simmer. Blanch green beans in hot water.
Prepare the Big Green Egg for direct cooking and heat to 450°F.
Remove planks from water. Remove salmon from brine and arrange on one plank. Lay green beans on the other plank, arrange mushrooms and pecans evenly on top of beans. Place both planks on grill. Close lid and cook for 12 minutes. Open lid and top bean mixture with blue cheese. Close lid and cook for approximately 2 minutes to melt cheese. Remove both planks from grill and serve immediately.
