From the Big Green Egg DVD (the DVD you get with each BGE purchase)
- Fresh whole pineapple
- Cayenne pepper
- Sugar
Core pineapple and remove outside rind. Sliced horizontally into 3/4- to 1-inch-thick slices. Lay on flat surface and sprinkle lightly with cayenne pepper. Sprinkle lightly with sugar.
Heat Big Green Egg to 600°F. Place pineapple slices on cooking grid sugar-side down to caramelize the sugar. Lightly sprinkle additional cayenne and sugar on top of the slices. Close lid; grill for 5 minutes. Remove and serve warm.
Note: Canned pineapple slices can be used, but the fresh are better if available.
